Not sure if I actually found the recipe I was after, so I combined the components of three existing recipes to get what I think I wanted.
3 cups watermelon, cubed
2 cups cucumber, peeled and cubed (peeling is optional if it’s one of those English cucumbers)
1 large heirloom tomato
1/4 cup basil
1/2 teaspoon salt
juice of 2 1/2 limes
3 T hoisin sauce
Mix together first four ingredients and sprinkle with salt. Blend lime juice and hoisin sauce in a separate small bowl, then pour over salad. Toss everything together and make sure everything gets a good coating of dressing. Adjust seasoning to taste (more lime, more salt, etc.).
OPTIONS: You can also add 1/4 of a small red onion, thinly sliced, along with 2T crushed peanuts (either salted or unsalted, depending on your preference). I don’t care for raw onion, and I didn’t have any crushed peanuts on hand.
